Paleo Day Three: Caramelized Onions, Sweet Potatoes, and Chicken Thighs

I’m so excited right now.

I decided to oven roast some chicken thighs after I’d browned both sides on the stove. Usually I just use olive oil and roast them at 425 for 15 minutes before shredding and serving-makes them very tender and delicious. Feeling a little adventurous, I added a little bit of sesame oil and half a diced onion before I threw it in the oven.

While the chicken thighs were roasting, I cut one sweet potato into precious little cubes and added it to a glass dish with olive oil, salt, pepper, and paprika, and threw that in the oven below the chicken thighs, but left them in there about 25 minutes longer.

The smell of the sesame oil, the onions as they caramelized and the sweet potatoes in the oven made my house smell like a happy fall paradise.

When the sweet potatoes were cooked through, I added it together with the chicken thighs and onions.

The chicken thighs didn’t absorb a TON of the flavor. I think if I’d marinated them a little bit longer, they might have had a little bit more pizazz. But they were good.

The sweet potatoes were awesome, because they’re sweet potatoes, and also because they’d taken on some of the flavor of the sesame oil and the sweetness of the onions.

I literally had to stop myself from eating the entire thing by myself before Seth came home.  I think I saved him maybe a third? Maybe? … sorry sweetie…
